Momma's Chicken & Dumplings


One of my favorite dishes growing up was homemade chicken and dumplings. My mom would make these for us when we did not feel well or when the weather was just too cold to eat anything else. This is a great recipe for a beginner chef because I use store bought dumplings. They taste the same and save you quite a mess! I hope you enjoy!

Servings: 4-6

Ingredients:

  • Olive Oil

  • 3-4 Cloves of garlic

  • 2 - 32 oz. Chicken Broth

  • Carrots

  • Celery

  • Whole Raw Chicken - skin on

  • 1 large package of store bought frozen dumplings (I use Annie’s or Mrs. B’s)

  • Parsley for garnish

  1. In a large Dutch oven or pot heat 3 tablespoons of olive oil. Once your oil is heated add 3-4 cloves of minced garlic. Heat until your garlic is toasted but not burnt.

  2. At this point add your skin on chicken. Pour 32 ounces of chicken stock into the pot to cover the meat.

  3. Add ½ cup of chopped carrots & ½ cup chopped celery. To this mixture add a generous amount of salt & pepper.

  4. Cover and cook for 2 hours. Make sure to check on it every 10-15 minutes to add more chicken broth if needed. When your chicken is completely cooked, pull it out of your stock and place it on a platter to cool.

  5. After your chicken is cooled, start to pull all the meat off the bones. Once shredded or diced set your meat aside for now.

  6. Turn up the temperature on your broth until it is boiling. Next take store bought dumplings (I use Annie’s or Mrs. B’s) and one by one drop into boiling broth. Make sure you give each dumpling enough room so that is has some space. About every 10-12 dumplings place a layer of chicken to keep dumplings from sticking together. Continue to layer you chicken and dumplings until all your dumplings are in the pot. You can then add the rest of your chicken (or you can save it to make chicken salad with). Cook at least 30 minutes or until dumplings are tender.
