Super Grains Salad with Creamy Avocado and Lime Dressing


Dressing Ingredients:

  • 1 Avocado

  • 2 Garlic cloves

  • ¼ cup roughly chopped cilantro

  • ¼ cup greek yogurt

  • ½ tablespoon of honey

  • 1 1/2 tablespoon fresh lime

  • 4 tablespoons Olive Oil

  • ¼ teaspoon Kosher Salt

  • ¼ teaspoon Ground Black Pepper

  • Water as needed

1. Put all ingredients into food processor (besides the water)

2. Blend until smooth.

3. Add water as needed to thin out until your desired consistency

Salad Ingredients:

  • 3 cups of arugula

  • 3 cups of mixed greens

  • ½ cups of cooked pearled barley

  • ½ cup of chickpeas, drained

  • 1 sliced avocado

  • ¼ cup of dried cranberries

  • 2 medium navel oranges segmented

  • ¼ cup of sunflower seeds

  • ½ medium red onion diced

  • 2 chicken breasts – sliced

  • ¼ cups of crumbled goat cheese

  1. Prep your veggies, barley, and chicken (I cook my chicken in the oven at 400F for 25-30 minutes or until internal temp is min. 165F)

  2. Throw all ingredients into a bowl and chow down!
