Blue Cheese Potato Salad


Serves: 4-6

  • 3 slices of cooked and chopped bacon

  • 1 and ½ pounds of red potatoes

  • 1/3 cup of olive oil

  • 3 and ¼ tables spoons of white vinegar

  • ¾ bunch of green onions chopped

  • ½ tablespoon of salt

  • ¾ teaspoon of black pepper

  • 1 ounce of crumbled blue cheese

Boil potatoes in a large pot of salted water for 15 min. Roughly chop and leave the skin on the potatoes.

In a large bowl: whisk together oil, vinegar, onions, salt, and pepper.

Add potatoes, bacon, and cheese. Serve cold.
