Edamame and Rice Bowl with Honey Soy Shrimp


Serves: 4

  • 1 cup of white rice

  • Shelled edamame beans

  • 1 lb medium-large of peeled and deveined shrimp

  • Salt

  • 1/3 cup honey

  • 1/4 cup soy sauce

  • 1 Tablespoon minced garlic

  • 2 teaspoons olive oil

  1. Cook rice according to box. I use Uncle Ben’s

  2. Cook edamame according to bag.

  3. In medium sized bowl whisk honey, soy sauce, and garlic together.

  4. Place shrimp into a ziplock bag with 1/2 of the marinade mixture on top. Shake the bag to cover all shrimp with the marinade. Marinate in the refrigerator for 20-30 minutes. Cover and refrigerate the rest of the marinade for later.

  5. Heat olive oil in a skillet over medium heat. Place shrimp in the skillet and cook on one side until pink, and then flip shrimp over. Pour in the refrigerated marinade and cook until shrimp is completely cooked.

  6. Serve shrimp with cooked marinade sauce on top of your white rice and edamame.
