Fig and Prosciutto Flatbread

1 - 16-ounce package whole wheat pizza dough (available in any supermarket) or homemade pizza dough
Flour for dusting your board or counter
5-6 large figs cut and quartered
6 oz of crumbled goat cheese
2 ounces thinly sliced prosciutto cut into one inch strips (about five slices)
1 cup arugula
Balsamic Glaze (store bought or homemade)
INSTRUCTIONS
Let dough come up to room temperature and rest in a warm place for one hour covered with a piece of plastic and a dish towel.
Preheat oven to 400 degrees
Sprinkle your counter with flour and roll out your pizza dough to the desired shape
Pop the dough into the oven for 10 minutes to pre-bake it. Once light golden brown remove.
Drizzle olive oil over the crust. Spread your arugula, goat cheese, prosciutto, and figs onto your pizza dough.
Place back into the oven for another 5 minutes. After baking for 5 minutes turn on broil to low and finish cooking for 3-5 minutes. Make sure to watch carefully.
Remove the pizza from the oven and onto a cutting board and sprinkle a bit of arugula on top. Drizzle with the Balsamic glaze.
