Cheesy Panko Pesto Chicken

Ingredients

  • 4 - Chicken breasts

  • 1 cup of panko breadcrumbs

  • 1 cup mozzarella cheese

  • 1 tablespoon of parmesan cheese

  • 4 tablespoons of basil pesto

  1. Preheat oven to 450 degrees.

  2. In a small bowl, combine panko, mozzarella, parmesan cheese, a drizzle of olive oil, and a pinch of salt and pepper

  3. Place chicken on a lightly oiled baking sheet. Brush 1 tablespoon of pesto onto top of each piece of chicken. Press crust into pesto to adhere. Roast in oven until chicken is no longer pink in center, about 20 minutes.
