Zesty Lime Shrimp

Ingredients
1 lb shrimp, shelled and deveined
3 tablespoons olive oil
4 cloves garlic, minced
1 pinch red pepper flakes (optional)
1/4 cup vegetable broth
1 teaspoon honey
Juice of 1 1/2 lime
3 medium zucchini, spiralized or cut into noodles
Salt and fresh cracked pepper to taste
1 teaspoon lime zest
2 tablespoons cilantro, chopped
Directions
1. In a medium size bowl, combine 2 tablespoons of olive oil, minced garlic, red pepper flakes (optional), 1 heaping teablespoon of cilantro, honey, lime juice, and lime zest. Stir well. Add your shrimp to this mixture and marinade for 15-20 minutes.
2. Heat the remaining 1 tablespoon of EVOO to a pan at medium heat. Once heated, add your shrimp. Cook for 3 minutes, flipping once at a minute and a half. Set your shrimp aside.
3. Leaving the marinade in the pan, add your veggie broth to deglaze your pan. Allow to simmer for 2-3 minutes. At this point add your zucchini noodles and cook for about 2 minutes. Be careful not to over cook (they get mushy).
4. Add your shrimp to the pan and quickly toss to incorporate. Serve topped with cilantro! Enjoy!
