Southern Comfort Collard Greens


  • 8 – 12 slices of bacon finely chopped

  • 1 medium sweet onion

  • 1 teaspoon of red pepper flakes (add less or more depending on heat preference)

  • 3 cloves of garlic mince (I grate my garlic to release more flavor)

  • 64 ounces of chicken broth

  • 2 lb of collard greens de-stemmed and roughly chopped

  • 1/3 cup of apple cider vinegar

  • 1 tablespoon of sugar

  • 1 teaspoon of salt

  • ¾ teaspoon of pepper

  1. First brown your chopped bacon in a large pot over medium heat.

  2. After 5 minutes add onions and seasonings and let simmer until onions are translucent.

  3. Add vinegar and 32 ounces of chicken broth. Add your chopped collards and let simmer for 1 – 2 hours. Use the remaining 32 ounces of chicken broth to top your collards throughout the cooking process when you see fit. You want to make sure they have plenty of liquid to help break down all the fiber in the greens. I use 56 - 64 ounces every time.
