Creamy Goat Cheese Mushroom Gnocchi


Ingredients

  • 1 Tablespoon Butter

  • 1 Tablespoon Wild Mushroom and Sage Olive Oil (from Pour Olive)

  • 3 Tablespoon Heavy Cream

  • 2 Tablespoon Thyme

  • 16 ounces Fresh Sliced Mushrooms (baby bellas & cremini)

  • 24 ounces Gnocchi

  • 1/4 cup Mint chopped

  • 4 oz Goat Cheese

  • 3 gloves Garlic

  • 1 shallot minced

  • salt to taste

pepper to taste

Instructions

Prepare gnocchi according to package directions or make your own!

- Melt 1 tablespoon of butter and 1 tablespoon of olive oil in a large skillet of medium heat.

- Add your mushrooms, and cook for 3 minutes or until lightly browned.

- Add your minced shallot,thyme and garlic; cook for 2 minutes or until shallots are transparent.

- Pour in 3 tablespoons of heavy cream into your skillet.

- Add your gnocchi and gently fold to combine.

- Fold in your crumbled goat cheese and garnish with mint.

- Salt and pepper to taste
